Wheat was brought to Mexico and the Southwestern U.S. in the 1600s by the Spanish. It was highly adapted to the arid lands of the region and was readily adopted by farmers and used for tortillas, soups and other dishes. Historically called Trigo Flor (Flower Wheat), Sonora is versatile heirloom white spring wheat that is now prized by chefs, bakers, distillers and brewers for its rich earthy flavors.
