Pueblo White Whole Wheat: Certified organic. Excellent baking quality with 12% protein. Lighter color. Great for sourdough baking, tortillas, flatbreads, baked sweets or to cook for grain bowls. Currently SOLD OUT.
Heartland Mills Rye: Versatile certified organic rye for any mixed or 100% rye breads. Also great for replacing rice in grain bowls. Rye can be sprouted for soups, salads, and baking and we like to malt rye for sourdoughs for deep caramelized color and enhanced flavor.
Mountain Mama Hard Red Wheat: Certified organic. The variety we have is from the San Luis Valley and called Jefferson Wheat. This wheat is great for baking due to high protein and great gluten strength. Berries can also be cooked for grain bowls or to replace any side or main dish that contains rice.
