Amaranth is a super food from Mesoamerica. The cruentus species are the red amaranths that were used as grains, in beverages and popping in Ancient Mexico. Vigorous plants grow to 6’ and have large bright red seed heads. Harvest when weight of seed head causes plant to lean over. Seeds are small and shiny black; edible leaves are green-red.
