This experience focuses on some of the most significant food crops of the Americas, Africa, and Asia. Learn about the history of maize, types of corns, growing methods and culinary traditions, including nixtamalization. Landrace corn varieties are highly nutritious, adding a substantial crop to your pantry. This short course will also include millets. There has been renewed attention on these forgotten crops due to their diversity and drought hardiness (e.g., numerous millets, teff, sorghum) as well as their exceptional nutritional qualities, fascinating culinary applications, and bold public health initiatives. Cost for this 3-day experience includes a welcome basket, farm experience with farm lunch, lecture with experiential dining, networking/connecting, Sunday morning coffee with breakfast and bakehouse cooking/baking experience.

Lodging is NOT included but we have partnered with the Canyon of the Ancients Guest Ranch and Ancient Echoes at Kelly Place to create one of the most beautiful and unforgettable Southwest experiences for you. 

General Schedule:

Friday: Arrival between 12 and 6pm at Pueblo Seed & Food Co. Bakehouse in Cortez, CO to pick up Welcome basket & course schedule followed by check in. Dinner on your own or use what’s in the basket!

Saturday: Breakfast on your own at lodges with possible hiking, biking, yoga and/or other activities offered by your lodge hosts.

Late Morning 3-Hour Farm Experience led by Dan Hobbs with Lunch at Pueblo Seed & Food Co. Farm (Exact times depend on season)

Afternoon Back to Lodges for relaxation.

5pm Connecting Hour at Ancient Echo at Kelly Place

6:30pm Lecture by Dr. Nanna Meyer, with Experiential Dinner catered by Pueblo Seed & Food Co.

Sunday: 10am Coffee with Morning Buns, Bakehouse Tour & Bakehouse Experience 

Followed by Shopping at Bakehouse, the option of signing up for a Healthy Lifestyle Consultation, and departure

FOR LOCALS: We will also open the Farm Lunch & Dinner Experiences as well as the Bakehouse cooking/baking experience for locals depending on bookings. Stay tuned for updates. Each local experience is $50 and will be posted under this Event page. 

CANCELLATION POLICY: Host cancellations due to weather, other environmental or personal issues will result in a full refund to all participants. 

Participants will receive full refund if requested 15 days prior to the event. For late cancellations, we will refund half of registration cost.

Hotel cancellation policies are separate from our policies. Please check with your host hotel for their cancellation policy. 

COMMUNICATION: Two weeks prior to the course we will send you details regarding logistics, course details, and policies, with a short questionnaire regarding dietary and other restrictions or preferences.

OTHER RESTRICTIONS: This is an alcohol free event. However, we recommend Wild Edge Brewery, Sutcliffe Vinyards, and Fenceline Cider as great places to enjoy local beverages. 

No pets are allowed on our farm or in our bakehouse but trained service dogs are welcome.
