This corn meal is stone ground on our New American Stone Mill. This Abenaki corn was grown by Ring-a-Ding Farm in Howard by Salida, CO. This corn is a flint corn with very hard yellow and red kernels. It is thought to have originated from the Abenaki tribe but Roy Calais, a farmer, receives the credit for this corn as he has been working with it for decades through selection. Thus the name Roy Calais corn. We chose a smooth yet coarse setting on the mill to make a nice corn meal that cooks in about 30-45 minutes. The color of the meal is yellowish red. It is delicious.
