We offer several flours, some of which are milled by us at Pueblo Seed and Food Company.
Mountain Mama Hard Red Wheat: This certified organic wheat is grown in the San Luis Valley. The variety is Jefferson wheat and has excellent baking quality. This product is milled by Mountain Mama Milling in Monte Vista, CO.
Mountain Mama Ryman Rye: This certified organic rye is grown in the San Luis Valley. The variety is Ryman rye and has a subtle rye flavor with great baking quality for rye breads or any other applications such cookies, pancakes, or crackers. This rye is a winner in blending it with wheat flour to make mixed wheat and rye sourdoughs.
Blue Corn Flour: This blue corn flour is stone-milled by Pueblo Seed & Food Company and is certified organically grown and sourced by us from New Mexico. This is a flint corn with a dark color and deep corn flavor. This flour is 100% Whole Grain, unsifted with a slightly coarser texture (but not as coarse as corn meal) which we find to improve baked corn products.
Einkorn Flour: This einkorn flour is stone-milled by Pueblo Seed & Food Company and is certified organically grown and sourced by us from Utah. This flour is 100% Whole Grain, unsifted. We use a fine grind on this grain.

Flours all have a 1-year shelf-life from milling. To keep your flour fresh, keep it closed tightly and in the freezer if possible.
