Fresh garlic bunches are now available at limited quantities. This week we have Penasco Blue, fresh out of the ground, this is a Rocambole variety. This garlic has been grown for generations in the higher elevations of Taos County, New Mexico. It is a mild but rich flavored garlic. Ideal for eating pressed into salads or pestos, or any other way you eat garlic raw. Skins are deep purple to deep brown, and external skins usually have quite a bit of pink streaking.
